Abstract:
This report explores the Food & Beverage (F&B) service operation at Big Kitchen, the main Buffet restaurant at Hilton Sanya Yalong Bay Resort & Spa. Drawing on my personal experience as an intern in the hotel’s F&B department, the study provides insight into how Big Kitchen manages its service workflow to ensure efficiency, consistency and a high level of guest satisfaction. Big Kitchen operates as a buffet only restaurant, catering to wide range of guests throughout the day. During my internship period, I had the opportunity to observe the service process closely from guest seating to food presentation, guest interaction and overall service coordination. My experience allowed me to assess how restaurant team handles daily operations while maintaining the brand’s standard of excellence. The restaurant runs under a define service structure that emphasize teamwork, quick response to guest needs and attention to detail. Each and every staff plays a vital role in catering a smooth and effortless dining experience. Which needs a synchronized communication between kitchen and service teams. These actions contribute remarkably to both guest satisfaction and operational effectiveness. A major focal point of this report is the role of staff training and communicating in delivering consistent service, especially during peak hours. In a large-scale buffet setting like Big Kitchen, being able to sustain with the service standards even under enormous pressure is essential to meeting guest expectations, particularly within a luxury hotel setting.
